<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">The end of each CSA season feels
like a mark in the story of our farm. How will we look back on this season?
What lessons will we carry that will make us better in the coming year? I have
not always been a farmer, and I did not grow up in it. But the past seven years
of my life are each defined by a season of growing. It is how I keep track of
things, by counting the seasons. I am not so good with the numbers because it
is easy to forget what the exact year was that we went to that one farmers
market, or what year it was that all the tomatoes died in all of New England. I can count back in time by those more
distinguishable events and track my own personal history in that way as well as
the history of our farm.</span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">Our farm is still so new and we
are just beginning to exit the initial start up phase. And after many years of
figuring out where we want to be, I have to say I like the outlook from where I
am now. And the glue that holds our farm together, that ensures that we can
wake up each day and go out and do what we love, work outside, grow healthy food
without the use of herbicides or pesticides is our CSA and all of you. By being
a part of our farm you help to contribute to the economic stability of our farm.
A commitment for the season means that we do not need to spend the season
running around trying to find outlets for all the food we have grown. It means
we can focus on taking close care of our animals, taking the time to move them
around, to protect them from predators. It means we can take the time to
cultivate our crops and spread compost where they need it. It means we can
scout for bugs, destroy crops that may spread disease to other crops and
generally care for our farm with a great deal of intention.

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">There is a reason that growing
crops organically and raising animals outside is not the standard of
agriculture. It takes a great deal more effort, time and money to farm the way
that we do. Chickens kept outside on pasture are subject to predators like fox,
hawks and others. A conventional pesticide sprayed on a crop once can take care
of a bug problem for the whole season. I plant multiple successions of many
crops with the knowledge that bugs and disease will wipe them out before you all
are done seeing them in your share. And then there are the weeds, a field of
carrots would be exponentially less time consuming and easier to grow with an
herbicide. Carrots grow slowly, they take their time and many times the weeds
get a real head start on them. We fight against this with tractor mounted
weeding tools and human muscle and sweat. And this human muscle and sweat is
paid a fair hourly wage and given many of the fruits of their labor for free as
well. So by being a part of the farm you are doing more than getting your
weekly allotment of food, you are contributing to an alternative and sustainable
future in how we eat.</span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">So as you look towards the coming
season we hope you will choose to continue to be part of the growth of our
farm. If you are planning to sign up for the winter CSA and have not done so
please do so soon, so I can focus, not on so much marketing of shares, but on
kneeling in a field of carrots and digging them up for winter storage. And if
you have questions about anything, the winter, next summer, how to cook things,
something you did not see in the share that you were hoping for, let me know.
Our direct relationship, at the pick ups and through our other forms of
communication is another special aspect of being part of our
farm.</span></span></div>

member-turned-crew member. In my time as part of Groundworks Farm, I have moved
through plenty of variations on those titles. The short version is, I got hooked
on Margaret and Kevin's Kool-Aid (or, more likely, organic carrot juice) and
decided to throw myself into my food system for a period of time. I went from
being a member when the farm was in Vermont, to
being so connected that it was a huge loss for me when they moved the farm to
Maryland. They
offered generously to have me come join them, so last July, I did.

and Margaret went on an experiential visit to some friends' farms in Vermont, I was put in
charge of keeping things running here. It was supposed to be a quieter week,
with no pickups and a smaller crew to manage, and was given mainly the daily
farm chores and a list of soups to prepare for the Frozen Meal Shares. Seemed
feasible, given I have learned everything I know about farming from these
guys... just do as I'm instructed and it can't be so bad. They did leave me with
some numbers for people who would help if there were problems, etc. BUT
EVERYTHING FREEZING ISN'T REALLY SOMETHING TO CALL EMERGENCY CONTACTS ABOUT.

week--below freezing for at least 72 hours straight, in the teens for at least
36 of those hours, and windy. While I know there were other parts of the country
which were much colder than we were, it seemed like a lot for me to manage at
times. I do feel homesick for Vermont often,
and even Vermont in the winter. But I can't say I've
felt homesick for trying to farm in Vermont winter. Pig feed trapped in a
frozen-shut trailer, a van wouldn't start so I had to drive around the farm in
my Volvo, tubs of water covered in inches frozen solid and requiring a
sledgehammer, running water going out all over the farm, which is quite
inconvenient when trying to prepare soup. Also, I think I've discovered that
lots of warm, non-cotton layers actually perform the task of keeping you warm
purely by not allowing your sweat to turn to ice. So many little </span></span></div>
<span style="font-family: Georgia; font-size: small;"> adventures, in
what seemed to be straightforward chores and tasks. Of course, everything ended
up fine, and plenty of soup was made, don't worry.</span><br />

while they were away, and several times I have been glad to watch things so they
can have some time off the farm. Through my six months here, I've gained so much
respect for the amount of guts they have each day. Handling whatever pops up in
the course of a day while still maintaining what needs to be done on a regular
basis--it is no doubt that they ARE passionate about growing us all amazing
food. They need to approve this blog post and are not ones for tooting their own
horns too much so I'll keep the praise to that. </span></span></div>

little stuck, mainly because I wasn't sure what to say. I started to think about
what perspective I would have on farming that would be insightful enough, and
got stuck on the possibility that even explaining what Groundworks Farm is to
me, or even who I am to Groundworks Farm, could take up a blog post. Seems a
little self-centered to write about myself, but I don't think it's about
me--it's ultimately about all of you, too. We are all connected because of this
farm, whether our motivation is health, value, environmentalism, commitment to
community, personal relationships, or something else. And because of that, we're
doing something good for ourselves but also good for one another. Not everyone

in and day out farming will drive you crazy; it will break your heart and repair
it again over and over. You can spend a week planting tomatoes that don’t end
up producing a good crop, or go out and weed a section of carrots only to
discover that a groundhog came and ate it all in the night. Then there are times
when you go to check a bed of carrots to find large fat and long roots below the
surface, when a few rows of sweet potato digging leads to a few thousand pounds.
Some days you just glide through your work, and most of the time you can look

don’t know how many of you know the timeline of this season but I am going to
share a bit of it with you. This winter after a few years of leasing land we
purchased our farm here in Pittsville. We still had a CSA in Vermont which ran through
April (we begin seeding things in our greenhouse in February). So as soon as
possible Kevin and I took down our greenhouse, loaded it on a trailer and Kevin
headed to Maryland leaving me to keep up with the winter CSA and wait for the
ground to thaw so I could clean up the fields while he got to work taking a
house and farm that had been sitting doing nothing and turning it into something
again, bringing it back to life. And in the first week of April I made the
final CSA delivery and then with an incredible amount of help from friends and
family we moved the rest of the farm in a weekend.

started right up and by mid April there were pigs, chickens and vegetables in
the fields and with much anxiety we had some produce ready by the first of
June. We have spent this season learning and growing a lot. The new and warmer
climate of Maryland has offered up challenges and
advantages. Mid-summer pest pressure was higher than we have ever seen, we also
had a melon crop like never before (there is only one variety of watermelon that
will ripen in the short New England summer).
And now the long fall has led to all kinds of greens and lettuces’ continuing to
grow and really thrive as the air has turned chillier and the bugs have slowed
down. In many ways I feel as if I have been here forever and yet it has been
less than 10 months.</span></span></div>

that our sweet potato supply was dwindling, we went out and dug up 5 more rows.
The first step in this is to pull the actual vines out of the ground that grow
above. We use black plastic mulch to heat up the soil as sweet potatoes like
the heat and we lay a line of drip irrigation in each row as well in order to
water them when they need it throughout the season. So after pulling the plants
you go through and pull the plastic out of the ground and the irrigation lines.
Then we come through with a potato digger. I think I have described this
before, but it is pulled behind the tractor and has a shovel and a metal
conveyor belt kind of thing which is slatted so that the potatoes stay on it and
the dirt falls down. Then when the sweet potatoes fall off the back of it they
land on top of the soil. Then we come through with boxes and pick them up off
the ground and fill the boxes up. Once all the boxes have been properly filled
we drive a big trailer along side of them and pick them all up and stack them on
the trailer, then drive them to the walk in coolers and put them into storage.
Well as we began to dig these beds we felt they were giving us a pretty good
yield. Large sweet potatoes (you will see this week at the pick up, some of
them are monstrous) made for a heavy yield and pulling them out of the field was
not an easy task. Each box when filled weighed about 55 lbs. We filled about
130 boxes (at least, Kevin lost count at some point in the unloading process).
But at that rate alone we harvested at least 7,150 pounds of sweet potatoes, not
to mention there is a whole field of them left to get still.

this week. We went around preparing for the frosts, especially winterizing
things we built this summer that had never needed any protection, like our
irrigation well, which now has an insulated building around it. We harvested the
last of the peppers which had ground back a little since we last harvested them
and you will see a few peppers in your share this week. Tomato plants, which had
stopped producing finally, went black and several of the cut flowers did as well
(though some live on past several frosts). Frost is not just about killing
summer plants though. The frost also sweetens many things. When the plants get
cold they start to store up more sugar in order to survive. This means that
kale looses some of its bitterness and becomes sweeter and carrots also begin to
store up sugar as well. So there are advantages to the cold weather that we
will see in the flavor of some of the crops. So happy eating this
week!</span></span></div>

are just beginning to dive into the fall harvest season. Walking around the
farm we can see roots in the ground beginning to fill out. We have begun with
the sweet potatoes, going down row by row and pulling up their vines before
going through with the digger to get them out of the ground. The digger, which
runs on the back of the tractor, has a large shovel that goes down into the
ground and then a conveyer belt that is open so dirt can fall through it. The
sweet potatoes go up the belt, the dirt falls away and then the potato lands on
top of the soil. Then we come through with boxes and fill them up with
everything that came to the surface. These go in a greenhouse to cure and then
into their storage room for the winter. One of my favorite things to do on the
farm is to harvest root vegetables in the fall. Kevin and I have spent many a
cool fall day on our knees, armed with produce boxes and scissors, making our
way row by row through beets or carrots or turnips (and others). You grab the
crop by its tops, snip it cleaning and let it drop in the box. Ideally, you get
to do this in the fall, when you are just a little cold and you can look around
at the leaves changing colors and just be super happy to have a job where you
can work outside like this. Sometimes, you do this when the plants you are
harvesting are still slightly frosted and you try to figure out if you can hold
a beet with your down gloves and other times you do it in the brutal heat.
Either way I love the fall harvest. It is not like harvesting in the summer
when we simply go out and get what is needed that week. In the fall you take on
a whole field of carrots and get them harvested, put in storage and you look at
what you have done and you see a winter full of food for the whole CSA. Over
the next month we will be hauling in harvests by the ton. Each day or week,
depending on the abundance, we take on an entire crop till the field is bare.
We are looking at a large beet and carrot harvest. There are also a lot of
turnips. I tried out some more varieties of radishes that also store well and
this week you will be seeing watermelon radishes in the share. These are
heirloom radishes related to a daikon. They have a bright pink inside which is
where they get their name from. They are milder than other radishes and can be
used in salad, cooked in stir fry or roasted. They are also very good pickled
and can be mashed with potatoes like a turnip. There is a recipe below for just
putting them in a salad with avocado and lettuce. I hope you enjoy the
beginnings of the fall harvest as much as we like harvesting it for
you.</span></span><br />

and starts the first week in December and goes every other week for 12 pick ups
until May. Because the pick ups are every other week the size of the produce
share is bigger and it is designed to provide you with most of (if not all) your
produce depending on how much produce your family uses. The share is designed
to feed a family or two avid cooks. Many people wonder and ask if there is
really that much you can grow and give out in the wintertime and they are
usually shocked by the list I give them of what is in our winter shares. Not
only do we grow a wide variety of storage crops such as winter squash, sweet
potatoes, beets, carrots, potatoes, parsnips, radishes, turnips and more we also
have a 200 foot greenhouse in which we grow winter greens and we are building a
second one this fall for later greens. So we can enjoy fresh spinach and other
treats all winter and once we get into early spring the greenery will increase
even more. In addition to the storage and fresh crops we put some frozen and
canned items in the winter shares as well. Pickled green beans, beets,
tomatillo salsa, tomato hot sauce and more can be found in the share as well as
frozen tomatoes, pesto and frozen melon. </span></span></div>

moved the laying hens across the farm. We moved them to the area where our
winter squash was recently harvested out of. At times we use the chickens like
this to eat up bugs and grass and clean up and re-fertilize an area where we
have had vegetables growing. We find that the chickens are very beneficial to
our vegetable operation. We can move them around; graze them on cover crops and
more. In the late season we have struggled with stink bugs decimating all of
our plants in the cucurbit family. This includes cucumbers, zucchini, summer
squash and winter squash. We harvested our winter squash just in time before
the stink bugs really had a field day eating the fruits. They also enjoy eating
the bottom of the stem of a very healthy looking cucumber plant so that it dies
just in time before producing any fruit. You might gather that I am not a huge
fan of these guys. Anyway, we moved the chickens over to the area where the
squash was planted hoping to move them through the field and have them eat grass
and bugs. Today, after giving them some fresh water, Kevin and I were standing
watching the chickens as they went after all the stink bugs which are all over
the place in this field. We don’t know if the chickens will make a big
difference at all but it is always interesting to see them go to work and to
see, in small ways, the benefits of being a diversified farm. We will keep you
updated if the chickens eat all the stink bugs. That would be a miracle. As we
were leaving the field I picked up a stunted watermelon that will never be able
to ripen that was outside of the fence. It, being just one fruit was covered in
probably 50-75 stink bugs. I picked it up gently and threw it in with the
chickens.</span></span><br />

Last week we launched a <a href="http://www.kickstarter.com/projects/groundworksfarmmd/groundworks-farm-csa-making-the-move-to-maryland?ref=home_location">kickstarter</a> campaign to help with some of the expenses of moving and starting our farm over again. If you have not heard of kickstarter before it is a fundraising platform for all kinds of projects and small businesses. The way it works is an all or nothing model where we set a fundraising goal and an amount of time we can raise the funds in and seek out folks to make pledges towards our campaign. If we have met our goal by the end of the project everyone who made a pledge is charged for the amount they pledged and we distribute your rewards that you can pick out on the page for making a pledge. We are a week in and about 30% of the way towards reaching our goal of $10,000. We only have till the end of March to reach the goal. So we are turning to all the fans of the farm to make a pledge, it can be as little as $1. Each pledge brings us closer to our goal. <br />

huge undertaking. It takes a certain level of insanity and perseverance in
order to take a piece of land and turn it into a living thing. Once Kevin and I
got going here at Groundworks Farm it seemed to me that there was no turning
back. The land demands to be cared for, the plants need watering, the soil
needs to be replenished with compost once it has used the energy it has to

lot of things by hand meaning that we really get to know pretty much every inch
of the farm. We walk the farm on our knees pulling weeds and transplanting
seedlings. We lie down in the dirt inspecting the health of the
crops. </span></span><br />
<br />
<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">This kind of commitment to a place
takes a lot of energy.<span style="font-size: small;"> </span>Without long term<span style="font-size: small;"> </span>security on a piece of land there is a
lot that you cannot do with the farm and it can be limiting to the success of
the farm. Currently we lease the land that we operate on and over the past
couple years we have been looking for land to buy. We have looked at farms all
over the east coast, our needs being very specific. The most important factors
were a price within our reach, a farm with good high quality land suited for
growing vegetables and proximity to people to be members of the CSA (there is a
lot of cheap land in places with no people). We literally looked at land for
sale from Virginia to Maine. This winter all of
the pieces came together for us. We found a property with 40 beautiful acres of
flat, sandy rich soil; ideal of growing vegetables. In addition to the tillable
acres the farm has 14 acres of woods, a house and several small Outbuildings.
It was cheaper than anything else comparable we had looked at. We found out
about this farm over a year ago but wanted to keep looking around. In that year
we did not find anything that met our needs like this property. And so last
week Kevin and I took a major step for ourselves and for the future of
Groundworks Farm and purchased our very own farm.</span></span><br />
<br />
<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">The catch is that we will not be
able to bring all of you, our wonderful members with us. The farm we have
purchased is on the Eastern Shore in Maryland. </span></span><br />
<br />
<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">While we are thrilled to take this
step, it is bittersweet for us. We are sad to leave behind the connections we
have made here and the support that we have felt from our friends and neighbors
here in Pittsford. All of you who have made the farm possible with your
support. At the same time we are excited about the new possibilities that this
step will bring. </span></span><br />

got out of bed to get dressed and to go with our son, Kevin, on the deliveries
he would make to Hebron, NH, and Cambridge, MA. They wouldn’t be returning until after 7
pm. I smiled as I rolled over to go back to sleep. That could have been me,
plus the irony of Brooke getting up early any day was not lost on
me.</span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">The day usually starts with
breakfast at 5:30 am at Groundworks Farm, except on delivery days, but I was
sleeping in—until 6. After all, I’m retired. My legs were complaining loudly
to me from the constant bending over while harvesting the day before, but I
reassured them that today would be easier.</span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">I hobbled out to start the day at
7, one hour after Margaret and their helper Kevin A. had begun. The first job
was sowing seeds: kale and lettuce for fall harvesting. I smiled. My legs let
out a sigh of relief. The instructions were simple, just one seed per
indentation. You don’t realize how difficult it is to put just one little seed
in each indentation until you try it. Margaret quickly and smoothly fills tray
after tray, as I struggle to get the seeds to drop one by one. Oops, five fell
into that one, better move on, darn three in that one. Well, someone is going
to be thinning a bit. The lettuce seeds were worse. They look like tiny grass
seeds, and they don’t roll out of your fingers easily. But we finished with
seed to spare.</span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">Next on the list was harvesting
onions. My legs said, “hey wait a minute,” but I pointed out that they had just
gotten a couple of hours of rest, so suck it up. Onion harvesting is quite
musical, actually. The tops of the onions stick out of a small hole in the
black plastic that they grow in. You grab the onion and as you pull the onion
through the tiny hole, the plastic stretches and rubs against the onion skin,
causing a squeaky noise followed by the pop of the onion as it escapes the hold
of the plastic. I liked that. My legs could have cared less. We made several
trips to the greenhouse to spread the product out to dry. The heat was intense
in the greenhouse, and that slowed me down. Margaret only left me once, though
I took advantage of that to go into the house to down a quart of water. But I
did have a long walk back to the onion field for more onions, and that musical
sound. Squeak, pop. We harvested a lot of onions before lunch. The greenhouse
floor is filled with drying onions.</span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">After lunch we finished the final
row of onions, one where the weeds in the walkway had grown so tall that a
machete would have been useful to get to the product. We didn’t have one, but
we muscled our way to every onion in the ground. </span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">Next on the list was something
less physical: transplanting kohlrabi. Margaret gave me the job of punching
three rows of holes into the black plastic , eight inches apart. I was in heaven
because I got to use their “toy” hole-puncher. It is a wheel with spears every
eight inches on an axle attached to a four foot long stick with handles. As you
steer the wheel down the bed, the spears make popping sounds when exiting the
plastic. More music! Then we transplanted: plunge two fingers into the dirt,
drop in the plant, and cover. The hard part was getting them to come out of the
flats in one piece. Margaret did most of that, thank
goodness.</span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">That job is now done, and the
bending over has finally put my legs on life support. But we have one more
project: weeding carrots. I kneel for this one so that I can pull grass and
weeds away from the small carrots, cringing when I pull a weed and find a carrot
in my hand as well. But most carrots survive me, surprisingly to me at least.
By 4:30 pm I am sitting on the ground while weeding because I can’t kneel very
well anymore.</span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">Margaret then asks me a question.
“If Kevin were here, what would he have you do until 5:30 when dinner will be
ready?” I sense a trick question, but somehow I come up with “By now he would
be worried I might die on him, so he would give me the rest of the day off.”
That seemed to satisfy her. I offered to write her farm news for her which
thrilled her. As we completed the weeding Margaret was singing Willie Nelson’s
“Don’t Let Your Babies Grow up to be Cowboys.” We both knew she meant
farmers.</span></span></div>

sun sets behind the mountains to the west and as the radio plays soft country
music. More music. I am smiling. The day’s music has been lovely. My legs
have a different opinion. They tell me this isn’t what I envisioned in my

very calm job. You wake up, you look at you list of what you want to get
accomplished and you go outside and do all (who am I kidding) most of the things
on the list. You come inside at the end of the day, tired and satisfied. You
eat, go to sleep and get up to do it again. Ideally it rains while you are
sleeping (but not every day). But if every day went like that we would be too
spoiled and it would take the fun out of things. And so things do tend to go
wrong and be less than ideal on many days. </span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">Last Saturday we had a great
harvest day. We got everything done in time and felt good about what was going
in the share for the Sunday CSA deliveries. Over dinner we were talking about
what we might be able to get done the next day. I said something along the
lines of: “I bet I can get a lot of carrots weeded if I don’t get any phone
calls or anything tomorrow.” I was making a joke, as when we head out on
delivery and I stay back on the farm I usually get a lot of calls asking about
details of what is packed, what are the limits for this week, who are the new
members who are showing up etc. After loading the truck and sending Kevin on
his way I started my planned out day. Seeding lettuce, transplanting basil,
then as we were about to move on to weeding carrots, my phone rang. It was
Kevin, calling just to let me know that the delivery truck had broken down on
the interstate and he was waiting for the tow truck. “I think it may be the
transmission but I’m not sure. You should email the members. I think I might
be late.” </span></span></div>

<span style="font-family: Georgia; font-size: small;"><span style="font-family: Georgia; font-size: 12pt;">This is not the kind of message
that leaves one with much confidence or direction for the remainder of the day.
I went and sent an email and then I went on with weeding, only now anxiously
awaiting the next phone call, one in which I would find out what was actually
happening. That came an hour or so later and only about 30 minutes before the
scheduled start time of the CSA pick up. Kevin called to say that the
transmission on the truck was definitely broken but he was in a UHaul truck with
all the produce and eggs and was headed to Cambridge. He was still an hour away, but
could I send another email to the members announcing that the pick up would be 1
hour late and he would just focus on driving fast and not missing any turns.
This seemed like a good plan to me. And so around 1pm (the pick up starts at
12:30) Kevin arrived at the CSA pick up location, set up and people arrived and
got their shares. Of course, I was not entirely aware that he had gotten there
until I got the regular phone call, “Hey, what’s the limit on Kohlrabi?” “One
per share.” “Thanks, Bye.” That was when those of us back here at the farm knew
that things had turned out alright. </span></span></div>

You can also use Summer Squash. I got this recipe from the book <i>Can It!. </i>If you want to multiply the recipe and still can this make sure to multiply EVERYTHING. If you don't want to process the jars you can make the recipe and then refrigerate them and eat them within a month or so.<br />
<br />
You will need:<br />
3 1/2 pounds Zucchini<br />
1 cup thinly sliced onion<br />
3 tablespoons pickling salt<br />
Crushed Ice<br />
2 cups cider vinegar<br />
1 1/2 cups sugar<br />
1 tablespoon mustard seeds<br />
1 teaspoon celery seeds<br />
1/2 teaspoon black peppercorns<br />
1/2 teaspoon ground turmeric<br />
<br />
Step 1<br />
Wash zucchini. slice off the stem and blossom ends. cut zucchini crosswise into 1/4 inch-thick slices. Measure 12 cups zucchini slices. <br />
<br />
Step 2<br />
In an extra large nonmetal bowl combine the 12 cups zucchini and the 1 cup onion slices. Sprinkle with salt; toss gently to coat. top with 2 inches of crushed ice. Weight down the mixture with a heave plate. allow to stand at room temperature for 2 hours.<br />
<br />
Step 3<br />
Remove any remaining ice in zucchini mixture. Transfer mixture to a colander set in sink; drain.<br />
<br />
Step 4<br />
in a 5-6quart pot combine vinegar, sugar, mustard seeds, celery seeds, peppercorns, and turmeric. Bring to a boil and stir until the sugar dissolves. Add the zucchini and onion mixture. Return to boiling, stirring frequently; reduce heat. Simmer, uncovered for 5 minutes.<br />
<br />
Step 5<br />
Ladle hot mixture into hot, sterilized pint canning jars, leaving a 1/2-inch head space. Wipe jar rims; adjust lids.<br />
<br />
Step 6<br />
Process filled jars in a boiling-water canner for 10 minutes (start timing when the water returns to a boil). Remove jars from canner; cool on wire racks. <b>Makes 5 pints.</b><br />

How is it going to effect the upcoming season? What might we do differently? It is hard to say at this point what kind of effect an extra warm spring might have on the farm. We have been able to work up our soil a little early, plant a couple of things in the ground before we usually do. However, over the last couple days, the cold has returned to remind us that, though it may have felt like it a week ago, it is not yet summer. Inside the greenhouse lettuce continues to grow, tomatoes have germinated and we continue to seed many more plants. Thousands of little seedlings are getting their start. With the ground thawed we have had a chance to begin to prepare the fields for this year’s crops. Late season crops like kale and Brussels sprouts came out of the ground as well as the plastic mulch they were planted into. Our temporary hoop structures, which helped protect our kale and enabled us to have it all winter long came down and were brought out of the field. We welcomed 20 more piglets to the farm and next week 400 baby chicks will arrive. We have pulled the remaining winter spinach out of the new unheated greenhouse and are preparing the soil for an extra early tomato planting. The garlic is several inches high already. In many places around the farm, especially pasture where chickens were rotated last year, the grass is already dark green. Spring is here. We are pumped for another great season.<br />
